Winemaking and Aging
Harvest: By hand in small 5 kilo boxes in the second ten days of October
Vinification: The grapes fall by gravity into 50 hl steel fermenters and are reassembled and delestaged daily for the entire duration of fermentation. Fermentation at controlled temperature 25-27°C
Maturation: Affina 3 mesi in barrique di rovere francese e 3 mesi in bottiglia
