AREA OF ORIGIN: Own vineyards from Valpantena between the hamlets of Poiano, Quinto and Santa Maria in Stelle
VINEYARD SPECIFICATIONS: Situated in a hilly position, facing south-east, south-west. Strongly calcareous and sandy soil. The plants are in Gujot with a density of 4000 plants per hectare while a small share is cultivated in Pergola Veronese.
HARVEST: Hand picked in small crates in the second decade of September.
VINIFICATION: The grapes are pressed and by gravity descend into small fermentation tanks of 50 Hl. Daily pumping over and delestage are carried out throughout the duration of the fermentation. Controlled temperature at 28 ° C.
AGEING: Aging in barriques for 14 months.
TASTING NOTES: Ruby red color with garnet and purple hues. Fresh aromas of cherry, ripe and blackberry, greater aromatic complexity is due to notes of sage and coffee. The flavor is dry and persistent, the acidity gives elegance and verticality to the wine.
PAIRING: Ideal with cut, stews and medium-long-aged cheeses.
ALCOHOL: 14,5% Vol.
SERVING TEMPERATURE: 16-18°C.
